Hi Friends!

This month, the theme I chose was “Fresh Recipes for Summer Fruits & Vegetables”. Pretty much right up my alley, right?! As an RD I’m constantly encouraging people to eat more fruits and veggies and summer is one of the best times to take advantage of local produce. The problem is, sometimes you might go a little crazy at the farmer’s market or get something in your CSA that you’re just not quite sure what to do with.

    I would eat anything that has cucumber. I have personal experience that this little thing would make the heat away like nothing else.

    Well, this past weekend, I made a Chicken Tandoori (esque) Kebab on the grill. And the kebabs had different types of pepper also.

    Those rainbow vegetable skewers are GORGEOUS!! I bet even people who are not thrilled about vegetables would enjoy those!

    These recipes are great, I always love trying new fruits and veggies in a different way. My favorite summer recipe is a cold bean or pasta salad with fresh veggies, or maybe watermelon feta salad- a must try if you’ve never had it!

    I adore the bright colors of those skewers! I’ve been a sucker for summer squash noodles lately. I usually mix it with a bit of pesto or tomato sauce, and they’re just fab for dinner!
