My Go-To Meal: Egg Sandwiches

Hi friends!

Just popping in to share another go-to meal with you guys. This one is seriously too easy to require a recipe…but it’s one of my favs so I wanted to share it with you!

These sandwiches are so easy to pair with some veggies and fries for a quick, healthy meal!

Here’s my favorite way to make them:

Start by “frying” the eggs. Slice some homemade bread. (I suppose store bought will do…but homemade is better!) Slather on some hummus.  Add the eggs. Top with a slice of cheese, red pepper strips and avocado slices. Spread a little butter on the bread and put it on a panini press/George Foreman grill. When it’s golden brown, take it out and eat it!

Side note- if you eat meat, you MUST TRY THIS: Make the same sandwich, minus the hummus, but add pulled pork. I’m telling you. BEST.SANDWICH,EVER. Seriously. Try it. They make that sandwich at one of the sandwich shops downtown and it is my favorite sandwich of all time.

If you don’t eat meat, try just adding a little bbq sauce to your next egg sandwich. Deeeeeelish!

Best thing about these sandwiches?
They’re perfect for breakfast, lunch OR dinner!

        You can a super cheap George at Goodwill or a resale shop. I got a large one with removable/dishwasher safe plates for $10!

    Eggs are on our dinner plate 2 out of 7 days of the week (if not more). I’m always looking for new ways to use eggs, so thanks for this recipe idea! I have been doing dipping eggs a lot, with WW toast and a side of beans and broccoli. It’s getting old, so this might have to be next!

    LOVE egg sandwiches! They are probably my favorite – they became my fav in college because eggs are so cheap and stayed my fav because they’re delicious 🙂 Is there a favorite recipe for the homemade bread you like to use?

    I have been REALLY into eggs lately — and have made almost the same sandwich as you before but not with the hummus (usually laughing cow cheese and avocado) — the hummus must MAKE the sandwich huh?? YUMMMMMM.

    I love egg sandwiches too! I will have to try it this way! I also really like making a “grilled cheese” with tomato, mozzarella, and pesto!

    This is seriously my go to meal as well! It’s so quick and eggs are so filling and healthy. Mine is always so simply with an egg and sometimes a little wedge of laughing cow, this one sounds great though! I’ve never thought of using hummus and avocados but is looks delicious!

    Egg sandwiches are one of my fave things in life – they’re SO versatile. My latest breakfast crazy is a toasted fried egg sandwich with dijon mustard & apricot jam. Or an open faced (knife & fork) egg sani with hummus, spinach, tomato, avocado, egg and melted cheese. YUUUM 🙂

    I love a good egg sandwich, but I also love grilled cheese sandwiches. One of my favorites is a grilled provolone and tomato sandwich…yum!

    Eggs are great for go-to meals. I like egg sandwiches and my Chinese take-in for meals, and I sometimes bring hard boiled eggs for work snacks.

    yummm! i’ve been ALL about panini sandwiches these days. this combo sounds amazing. i make egg-pepperjack-avocado sandwiches pretty regularly, but i never thought to add hummus! that sounds amazing.

    I l.o.v.e. egg sammies with a tbsp of nonfat cream cheese and a tbsp of sugar free strawberry jelly! Never would have thought to put those ingredients on there… Definite must try!

    I LOVE egg sandwiches! I add laughing cow cheese, spinach and ham, and sometimes avocado, add to panini and make it nice and toasty! Pulled pork sounds freaking unreal!

    Oooh egg and hummus is a great idea! I love sandwiches so it’s tough to pick a favorite – it’ll have to a be a toss up between PB&J or grilled cheese!

    This dinner looks great! We do grilled cheese and tomato soup a lot but I love how you have sweet potatoes and green beans. This is going onto next week’s meals for sure.

    I love egg sandwiches, they are so simple. But sometimes not the best for work/school because eggs can get a little smelly haha. I love egg and avocado together. Best thing.

    Eggs and pulled pork (or carnitas) is seriosuly the best ever. I’ve never had it in a sandwich, but I have eaten in the AM for breakfast. Super yummy.

    One of my favorite subjects! How about the huevos rancheros sandwich? Melt some low-fat cheddar or jack on 1 slice of toast and spread some refried beans on another slice of toast. Scramble one egg with a spoonful salsa and then top it with some slices of avocado…. ahhmazing.

    I try not to eat too much bread. I would probably try an open faced egg sandwich. I think tomato, avocado and bacon would be yummy!

    I am a big egg sandwich girl, too! In the summer, my fave sandwich is an avocado BLT. With or without a runny fried egg on top. 😉

    What we eat is what we are. This days when everything seems to be made so fast, in order to keep healthy we need to eat things that are nutritious, and egg sandwich is what I call brilliant, delicious and great in order to keep up with a healthy diet. Great article I can’t wait to prepare tomorrow.
