Chocolate Zucchini Bread

This Chocolate Zucchini Bread with Chocolate Chips is the perfect way to use up all of those summer zucchini. Kid-friendly and perfect for breakfast or snack time.

Ingredients

  • 1 cup shredded zucchini, squeeze lightly to remove excess moisture
  • 2 eggs
  • 1/3 cup oil (i use avocado oil)
  • 1/3 cup sugar
  • 1/4 cup applesauce
  • 1 tsp vanilla extract
  • 1.25 cups flour
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (I mix in half and sprinkle half on top before baking)
  • 1/4 cup hemp seeds, optional

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a food processor, combine zucchin, eggs, oil, sugar, applesauce and vanilla and process well.
  3. Add flour, cocoa powder, baking soda, salt and hemp if using and blend again.
  4. Add chocolate chips and pulse to combine.
  5. Scoop into loaf pan lined with parchment paper and sprinkle with chocolate chips.
  6. Bake for 35-45 minutes until top is firm and a toothpick inserted into the center comes out clean.

Notes

If you don’t have a food processor you can mix by hand, the zucchini just won’t blend in as well.
