These Blueberry Oat Breakfast Bars are a quick and easy breakfast or snack option. They’re easy to make and freeze well!

Ingredients

  • 2 eggs
  • 3/4 cup plain Greek yogurt
  • 1/4 cup oil (I use avocado oil)
  • 1/4 cup applesauce
  • 1/3  sugar
  • 1 tsp vanilla extract
  • 1 cup quick oats
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup ground flax
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine eggs, yogurt, oil, applesauce, sugar and vanilla in a large bowl.
  3. Add remaining ingredients except blueberries and stir until just combined.
  4. Gently mix in blueberries. 
  5. Bake in a 9×9 pan lined with parchment paper at 350 degrees F for 20-25 min or until just set. Don’t overbake!
