Ingredients

  • 1/4 cup cooked, mashed sweet potato
  • 2 tsp cocoa powder
  • 1 Tbsp maple syrup (or brown sugar)
  • 1 Tbsp peanut butter (or nut/seed butter of choice)
  • 1/4 tsp baking soda
  • 1 egg
  • chocolate chips, optional
  • ice cream for serving, optional

Instructions

  1. Mix first four ingredients in a bowl.
  2. Add egg and baking soda and stir until well combined.
  3. Mix in chocolate chips if desired.
  4. Pour into greased mug, ramekin or mason jar and microwave for 90 seconds.
  5. Top with ice cream if desired and serve warm.
